Last night I made the Finnish Nissua bread again, since it was to tasty the first time I made it. It didn’t turn out like it did before and I’m puzzled. This tends to happen to me though. The first time I try a new recipe it’s awesome and everyone loves it. Then any attempt after the first success is a total failure! Well, it is going to be eaten, just without the same texture as the first loaves. See how much lighter and airy they were:
Breads in general are a sticky point for me. Longing for the homemade masterpieces of my Grandmothers bread, this has become a journey towards accomplishing a seemingly impossible task.
Was the kitchen too cold? Did I knead it too long or not long enough? I’m sure that I followed the recipe, plus the notes I made while making the first batch – to the letter. These loaves are heavy and dense, maybe it was the rise time?
Can anyone clue me into the nuances of baking bread at home?
