- 3 rashers of bacon, sliced
- 2 sweet potatoes, peeled and diced
- 3 tomatoes
- 1/2 onion, sliced into large wedges
- salt and pepper, generous amounts
Add the sweet potatoes to a large skillet along with a small cup of water. Cover and bring to a boil. Cook until the potato is bright orange and starts to soften. Pour everything out into a colander.
Add the bacon to the pan. Render the fat then remove the crispy bits.
Add the onion and fry until it starts to pick up golden colours.
Add the tomato, bacon, sweet potato, salt and pepper. Cover and reduce the heat a bit to let the potatoes continue to cook. Stir a couple of times until you have a satisfactory distribution of doneness.
